Brussel Sprout Salad

Ingredients:

  • 1 lb Brussels sprouts, shaved very thin (mandoline or slice with a knife)

  • 1/3 cup dried cranberries

  • 1/3 cup pine nuts, toasted

  • 1/2 cup shaved Parmesan or Pecorino (use a veggie peeler)

  • Salt + pepper

Lemon dressing

  • Zest of 1 lemon

  • 3 tbsp fresh lemon juice

  • 1/4 cup olive oil

  • Salt + pepper

Instructions:

  1. Shave Brussels very thin. Put in a big bowl.

  2. Whisk dressing: lemon zest + lemon juice + olive oil. Season with salt + pepper.

  3. Toss Brussels with dressing and a pinch of salt. Let sit 10 minutes to soften slightly.

  4. Fold in cranberries, top with pine nuts and shaved cheese.

  5. Finish with extra pepper and a squeeze of lemon.
