Brussel Sprout Salad
Ingredients:
1 lb Brussels sprouts, shaved very thin (mandoline or slice with a knife)
1/3 cup dried cranberries
1/3 cup pine nuts, toasted
1/2 cup shaved Parmesan or Pecorino (use a veggie peeler)
Salt + pepper
Lemon dressing
Zest of 1 lemon
3 tbsp fresh lemon juice
1/4 cup olive oil
Salt + pepper
Instructions:
Shave Brussels very thin. Put in a big bowl.
Whisk dressing: lemon zest + lemon juice + olive oil. Season with salt + pepper.
Toss Brussels with dressing and a pinch of salt. Let sit 10 minutes to soften slightly.
Fold in cranberries, top with pine nuts and shaved cheese.
Finish with extra pepper and a squeeze of lemon.
