Crispy Caper Pasta
Ingredients:
1 lb spaghetti
2 tbsp capers
1/4 C Olive Oil
2/3 C grated parmesan cheese
juice of 2 lemons
1 tsp salt
Instructions:
In a bowl combine oil, cheese, lemon and salt. Set aside.
Cook thin spaghetti to desired texture. I prefer al dente.
While the pasta is boiling, heat oil in a small frying pan.
Once oil is hot enough, toss in capers. Allow capers to fry until they burst and are a bit crispy. Remove from oil and set aside.
Once the pasta is done, reserve a cup of pasta water and drain the rest of the pasta.
Then add your parmesan lemon mixture and toss. Adding pasta water as needed to really bring all the flavors together.
As a final step, add crispy capers to each serving of pasta and enjoy!
