Radish Salad
Ingredients
1/2 lb. radishes (10 to 15 small radishes)
3 Persian cucumbers
1/4 cup olive oil
2 Tbsp. lemon juice
3/4 tsp. kosher salt, plus more to taste
1/4 tsp. ground black pepper, plus more to taste
2 green onions, thinly sliced
1/4 cup chopped fresh flat-leaf parsley
2 Tbsp. chopped fresh dill
Instructions
Thinly slice the radishes and slice the cucumbers. Add both to a large bowl.
Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl (or right in the bottom of the big bowl).
Pour the dressing over the veggies and toss to coat.
Add the green onions, parsley, and dill, then toss again.
Taste and add more salt, pepper, or lemon juice if you want. Let it sit 5–10 minutes for best flavor, then serve.
