Greek Salad
Ingredients
Salad
Head of iceburg lettuce, chopped
1 cucumber, chopped
1/2 red onion, thinly sliced
1/2 pepper, chopped
1/2 cup kalamata olives
1/2 to 3/4 cup feta cheese, crumbled or cubed
Dressing
1 cup extra-virgin olive oil
¼ cup fresh lemon juice
¼ cup red wine vinegar
1½ teaspoons kosher salt
1 teaspoon black pepper
2 garlic cloves finely minced
½ teaspoon sugar
Instructions
Add the lettuce, cucumber, red onion, bell pepper, olives, and feta to a large bowl.
In a small bowl or jar, whisk together dressing ingredients.
Pour over the salad and toss gently.
Let it sit for 10 minutes before serving so the flavors come together.
