Greek Salad

Ingredients

Salad

  • Head of iceburg lettuce, chopped

  • 1 cucumber, chopped

  • 1/2 red onion, thinly sliced

  • 1/2 pepper, chopped

  • 1/2 cup kalamata olives

  • 1/2 to 3/4 cup feta cheese, crumbled or cubed

Dressing

  • 1 cup extra-virgin olive oil

  • ¼ cup fresh lemon juice

  • ¼ cup red wine vinegar

  • 1½ teaspoons kosher salt

  • 1 teaspoon black pepper

  • 2 garlic cloves finely minced

  • ½ teaspoon sugar

Instructions

  1. Add the lettuce, cucumber, red onion, bell pepper, olives, and feta to a large bowl.

  2. In a small bowl or jar, whisk together dressing ingredients.

  3. Pour over the salad and toss gently.

  4. Let it sit for 10 minutes before serving so the flavors come together.
